This week’s gratitude:

  • Rain to cool off this crazy humid-hot midWest summer
  • Jambalaya
  • Our recent discovery of cashew-based, dairy-free ice cream
  • Cool nights and good music
  • A pretty stellar hairstylist
  • Carageenan-Free Almond Milk

Man…I have a mouthful of things to be thankful for this week! But seriously, these are all things that are pretty prominent in my mind. For some reason, they make each day a teensy bit better.

I’m sitting here after work, thinking about how I should probably be outside in this god-awful heat helping the hubster mow the lawn.

Honestly, I don’t really want to do that. Not even a little. It is far too hot and sunny. If you have never lived a mid-West summer, just trust me on that comment. It is brutal.

Alas, we still have to live our lives and find ways to enjoy the heat, even if they are small things. Prior to our Whole30 madness, I loved ice cream. In fact, if you ever read my blog from France, you will see that I tried at least 1, if not 2 flavors of ice cream every single day. I’ve also been known to down a triple scoop waffle cone….but, no more. Dairy and I are no longer friends and I thought my love for ice cream had to be put to rest. I was wrong. So Delicious makes a mean cashew-based ice cream. It is totally dairy free and has few ingredients. Yes, there is still sugar but I still find it much more appealing and a healthier option than traditional Ben and Jerry’s. Check it out 🙂

Some days, like yesterday, I just face the heat head-on. My sister-in-law and I took her 4 girls to Adventureland. We really did have a “fun-filled day”, just as their tag-line says you will!! If you are into roller-coasters and all things that spin…this is the place for you! Personally, they all make me nauseas just by looking at them. The park is the perfectly sized for a day out, there are plenty of food options, shows, games and rides. It is a bit pricey, but like I said, if you’re into the rides, its worth the cost.

And other days I am so grateful for the coolness the evening brings. There is something so peaceful about sitting on the deck, having a beverage and just hanging out. It reminds me that I don’t always have to be moving. Sometimes, it is just as productive to be still.

I am thankful and happy to be here. There is so much positivity surrounding me and it feels good; it’s inspiring. Surround yourself with others who support you and lift you up!

And now, onward into the heat. Unfortunately, I actually do need to mow the lawn.
