Time to play catch up on my blog posts! I have made these protein bars once before and they are quite delicious. A perfect combination of healthy and satisfying for my sweet tooth. This time I modified the recipe a little to try and enhance more of the healthy properties and they still turned out amazing. Plus, they have some natural protein AND added protein powder to give you a boost of energy!
Did I mention they are super easy to make? I have always been a huge fan of Cliff bars for a snack/energy boost, but they are full of sugars and added preservatives no one needs.
I start by dumping all my dry ingredients into a large mixing bowl:
1 1/2 C. Rice Cereal
1/2 C. Oats
1/2 C. Shaved Almonds
1/4 C. Dried Cranberries
1/4 C. Raw Cacao Powder
1/4 C. Flax Meal
1/3 C. Protein Powder (I like SunWarrior Warrior Blend, Plain flavor, Raw Vegan Protein)
*You can obviously mix and match different fruits, nuts, chocolate chips instead of cacao powder, etc.
Step 2: Warm remaining ingredients on the stove
Melt together:
1/2 C. Coconut Oil
1/4 C. Raw Maple Syrup
Remove from heat and mix in:
2/3 C. Nut Butter (Peanut, Almond, Sunflower, Cashew, etc.)
Add melted ingredients to dry and mix well. Press mixture into a parchment paper-lined cookie sheet or brownie pan. Let cool completely, cut into bars and enjoy. These also freeze great so you can take a couple out as you need them and no chance of spoiling!
